Finding turkey mince these days is really simple. It is lean meat that has the added benefit of being tryptophan-rich, supporting that all-important serotonin for elevated mood. Let’s face it in this current COVID-19 or coronavirus period we could all do with some mood raising! the lean recipe also supports heart health.
Turkey does have the reputation of being a little bland, but the ingredients in this recipe combine to make for some great flavours. Ingredients such as the sweetcorn eliminate the need for any flour, making it gluten-free.
Serve with cauliflower rice, or courgetti noodles and top with a little chopped chilli and coriander if you fancy an extra kick and flavour!
Ingredients
- Serves 4
- 1 lb minced turkey
- 3 spring onions finely chopped
- 1 carrot finely chopped
- ½ cup peas
- ½ cup sweetcorn
- 1/2 teaspoon cayenne pepper
- 2 cloves of garlic, chopped
- 2 1/2 tsp sesame oil (or olive oil)
- 2 teaspoons fresh ginger, grated
- 2 teaspoons miso paste
- 1 tablespoon fresh coriander
- 1 can lentils, rinsed and drained
- 3 tbsp soy sauce
- 1 1/2 tbsp fresh lime juice
- 1-2 tsp water
Method
- For the dipping sauce: combine the soy sauce/lime juice/water with 1 1/2 tsp of sesame oil and set aside
- Using a food processor, mix ground turkey cayenne pepper, oil, garlic, ginger, miso, coriander and lentils for 5 - 10 seconds
- Add the spring onions, carrots, peas and sweetcorn, and mix again for 30 seconds
- On a work surface, form into approx 24 balls
- Place the meatballs on a baking sheet lined with parchment paper and bake in the center of the oven for 15 minutes
- Remove from the oven and drizzle with a little of the sauce. Set aside the rest for dipping.
- Serve with your favourite side such as courgette noodles or cauliflower rice
