Berry breakfast granola in a jar

Summary

This yummy is breakfast is the perfect for on the go when you are in a rush. There really are no excuses not to eat breakfast, particularly if it is a time issue, as this can literally be thrown together the night before and stored in the refrigerator.

The recipe below is just for the basic granola recipe, add what you would like as far as berries, fruit and yogurt is concerned.  You can make your own granola or buy it off the shelf, just be careful and check out the label for hidden sugar. The great thing about granola is that there are really no rules, just make it to your taste and chuck in nuts, seeds and berries and you are done. Go easy on the fruit as it is a sugar and processed in the body in the same way. If you are struggling with sugar issues then keep your daily portion down to one to two servings and increase the nuts and seeds for protein and healthy fats.

I have noted the serving size as 2, but it really does depend on how you plan on using it.

Ingredients

  • Serves 2
  • 2 cups of organic rolled oats
  • 1/2 cup of crushed almonds
  • 1 tbsp pumpkins seeds
  • 1 tbsp sunflower seeds
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger (less if you prefer but I love ginger!)
  • 2 - 3 tbsp coconut oil
  • 2 - 3 tbsp raw honey, locally produced wherever possible

Method

  1. Switch on the oven to around 160 degrees and pop in a baking sheet to preheat.
  2. Crush the almonds in a pestle and mortar to the desired consistency. I prefer mine just lightly bashed up as they add to the texture of the granola.
  3. Mix all of the dry ingredients together in a bowl.
  4. Melt the coconut oi over a medium heat in a saucepan.
  5. Add the raw honey and mx until a smooth liquid.
  6. Take the pan off the heat and mix in the raw ingredients. Stir well until all of the mix is coated.
  7. Spread evenly over the preheated baking tray and bake for 15 mins, turning over 1-2 times to toast evenly.
  8. Remove from the oven and allow to cool.
  9. Add to the top of greek yogurt, add fruit, mix with almond milk, whatever takes your fancy, but whatever it is have fun with creating your breakfast!
