Summary
Green lentils are a fibre rich superfood packed full of protein. It is also packed full of protein, B vits, folate, potassium, iron and zinc. When combined with spices and the goodness of coconut milk, it becomes a bowl of delicious flavours that are healthy and a powerhouse of nutrition. It is a perfect dish for a chilly evening and great as leftovers for supper. You can also pop it in a flask and take it to work for lunch.
TIP: To cook lentils faster, soak in warm water for an hour or in cold water for 3-4 hours before you start making the curry. A tight-fitting lid will help cook the lentils faster. Always check the water and top up if necessary. Dried lentils are better than the canned precooked variety since they are free of sodium and added preservatives.
Ingredients
- Serves 4
- 1 cup dried green lentils, washed and drained
- 3 tbsp coconut oil
- 1 large onion, finely chopped
- 2 cloves garlic, crushed
- 1/2 tbsp ginger, finely chopped
- 1 green chilli, finely sliced
- 1/2 cup coriander leaves, finely chopped
- 1/2 tsp sea salt
- 4 cups water
- 400ml coconut milk
- 1 1/2 tbsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala powder
- 1/2 tsp allspice
- 1/2 tsp ground cinnamon
- 1/2 tsp ground black pepper
- Garnish with a few coriander leaves and lemon or lime wedges
Method
- Melt the coconut oil in a heavy bottomed saucepan over a medium heart
- Add onion, ginger, garlic and green chili and sauté till the onion becomes translucent
- Add spices and further sauté for about 30 seconds to remove the raw flavour of spices
- Add the cooked lentils, coriander leaves, and salt and mix for another minute.
- Add the water and give a good stir. Once the water boils, cover the pot and reduce the heat to low. Let it cook for 20-25 minutes.
- Once the lentils are soft, stir in the coconut milk and let it simmer for 5-10 minutes to thicken a little
- Finally, season to taste and garnish with chopped coriander and lime/lemon wedges. Serve with rice or whole wheat crusty bread.
