Halloumi, broccoli and spicy sweet potato stir fry

Summary

It is amazing how many people don’t eat vegetables because of childhood memories of them being boiled to within an inch of soup! All vegetables are an important source of antioxidants and therefore fight free radicals and oxidative stress. They provide the vitamins we need for cofactors, for many important processes in our body, such as energy production and detoxification. Broccoli alone has many antioxidant and protective qualities. It contains sulforophanes that ramp up our own production of antioxidants via a mechanism called the NRF2 pathway. Let’s not worry about the complicated names so much, all you need to know is that it as a double whammy effect of not only supplying antioxidants from us eating it, but also triggers our own antioxidant defence from within. So get creative! it doesn’t just have to be boiled half to death, steam it, juice it or stir fry it as shown here! Add in a good portion of protein with it such as the hallloumi cheese,  or perhaps an alternative of your own choice such as some salmon or chicken.

Ingredients

  • Serves 2
  • 1 Head of broccoli cut into florets
  • 1 Sweet potato cut into cubes or thin wedges
  • 1 small white onion sliced
  • 2-3 cloves of garlic finely chopped
  • 1 red pepper sliced
  • Half a pack of halloumi, cubed.
  • 2 tsp paprika
  • 1 tsp cayenne pepper
  • 1 tbsp chipotle paste
  • Add water if necessary
  • 2tbsp of coconut oil

Method

  1. Preheat oven to 200F and add a tbsp of the oil to the baking tray, place in oven to melt/heat.
  2. remove the baking tray and spread the wedges evenly, coating them with the oil.
  3. Sprinkle over the paprika and the cayenne pepper and coat well.
  4. Place the tray in the oven and set the timer for around 15 mins.
  5. Make a cup of tea and take 5. Check wedges and turn.
  6. Place remaining oil in a wok or frying pan over a medium heat.
  7. Salute the onion and garlic until soft. (Remove potato from the oven and set aside if timer has gone off)
  8. Add the chipotle paste and stir in well, add a little water if necessary.
  9. Add broccoli and stir fry coating well for around 5 minutes.
  10. Add in red peppers.
  11. Cover with a lid a leave on a low to medium heat, adding water if necessary.
  12. Take a separate frying pan and heat over a medium heat. Dry 'fry' the helium until browned.
  13. Finally add the sweet potato and the halloumi to the vegetables and mix well. Serve and enjoy!
  14. If you want to cut the time down you can remove the step of oven cooking the potato. Just be sure to cut it small and place it straight in with the broccoli.
