Summary
Eggs Nestling in Avocado is a breakfast favourite of mine but equally can be served at any mealtime; breakfast, snack or brunch! I just love eggs and love avocado, so putting these to together is a no brainer! You get a double whammy of your omega 3’s in the egg and the avocado not to mention a good dose of protein. It is SO simple to make and a fairly good way to impress your friends at weekend brunch!
Ingredients
- Serves 1
- 1 large just ripe avocado
- 2 small free range eggs
- Optional spring onion or bacon to top
Method
- Half the avocado and remove the stone.
- Take a sharp knife and slice a small amount from the bottom of the avocado so it won't roll around and place the halves on a baking tray.
- Take an egg and crack it into a jug. Pour into the hole of the avocado. Repeat with the other egg/avocado.
- Place in the preheated oven and bake for around 15mins or the egg is cooked through.
- Optional - try topping with bacon spring onion or add a little spice with some finely chopped red chilli!
