I am a little hesitant at calling this a recipe as it is more of an idea than a recipe. It is hard to keep thinking of different ways to dress your lunch up so give this one a try.
Obviously the avocado is full of your healthy omega 3’s, and the egg will provide you with a good source of protein, thisĀ helps build muscles and allows people to feel fuller longer and stay energized which can help maintain a healthy weight. Aside from many other nutrients eggs contain a good source of Vitamin D, essential for many functions in the body.
Herbs have a range of healthy benefits, Parsley is high in Vitamin K, essential to bone health, and Mint is soothing and helpful to the digestive tract. Coriander contains a range of powerful antioxidants and can also lift mood! So get sprinkling…..or in this case rolling!
Ingredients
- Serves 1
- 1 soft boiled egg
- Good handful of mint
- Good handful of coriander
- Good handful of parsley
- Half an avocado
- Handful of mixed green leaves
- 1 tablespoon of extra virgin olive oil
- Sprinkle of sea salt
- Sprinkle any leftover herbs over the top!
Method
- Finely chop the herbs together
- In a bowl mix the herbs together with a drizzle of olive oil
- Roll the egg in the herb mixture so that it sticks
- Slice your half avocado
- Pop it all on a plate and add your mixed leaves
- Drizzle with you oil and sprinkle the sea salt
