Summary
Who said we had to wait until summer for a BBQ? However, unless you want to step outside and have the salad blown halfway across the neighbourhood, I strongly recommend you keep this in the kitchen and just take in the flavours, dreaming of a not too distant summer! It’s not that far away……….I promise!
These are not strictly Moroccan flavours but more Moroccan inspired. There are many great ingredients in this dish but I feel compelled to once again point out the anti-inflammatory benefits of turmeric, along with the anti-oxidants in the fennel and carrot in the slaw. Fennel also delivers a good level of heart friendly potassium and is a great source of fibre.
This is also a great lunchbox food as the skewers are great eaten when cooled too, and with the wonderful aroma of the moroccan spices, you’ll be the envy of the office with this one, either that or they’ll show you the door!!
Ingredients
- Serves 2
- 350g chicken breast fillet ( I used shop bought mini fillets)
- 1 tsp allspice
- 1 tsp tumeric
- 1tsp ground cumin
- 2 cloves of crushed garlic
- Juice of one lemon
- 1 tbsp oil of olive oil
- 1 fennel bulb thinly sliced
- 1 small carrot grated
- 1 grated apple
- 30g pistachio nuts
- 1 tsp tamarind paste
- 150g plain yogurt
- 6 - 8 wooden skewers
Method
- Mix the spices, crushed garlic, lemon juice and olive oil together in a bowl.
- Add the chicken to the spice mix making sure the all the chicken is well covered.
- Cover and marinade, preferably overnight in a refrigerator.
- Place the wooden skewers in water to soak for at least an hour before using. This will stop them burning under the grill.
- Mix together the tamarind paste with the yogurt. If the paste is sticky then add a little hot water first to loosen it.
- Place the apple, carrot, and fennel in a bowl and add a tbsp of the yogurt mixture.
- Mix well, coating all ingredients.
- Season with salt and black pepper to taste
- Add the pistachios and give another stir and set aside.
- Thread the chicken onto the skewers and place under a medium grill until cooked through.
- Serve up together with the remains yogurt on the side.
- You can serve this with a green salad or maybe some lemon quinoa on the side. Your choice!
